Where to use Ruby Pulse

Ruby Pulse is suitable for all desserts containing fats:

  • White and dark chocolate (decorations, shells, strokes, velour)
  • Ganache, truffles, fillings
  • Mousse cakes: velour, mirror glaze
  • Butter and cream creams (cream cheese, mascarpone, Swiss meringue)
  • Dough and cookies with fatty ingredients
  • Ice cream and cold desserts
  • Artistic confectionery techniques and strokes

How to use

  1. Before use, stir well the dye in the tube.
  2. Add gradually, drop by drop, controlling the intensity.
  3. Emulsify or mix thoroughly to obtain a uniform color.
  4. Add dye to chocolate only at the correct tempering temperature.
  5. For a deeper ruby shade, add a little more dye, but gradually.

📌 Recommended amount: 0.1–0.3% of the total product weight.
